Turkey Chili Taco Soup

Turkey Chili Taco Soup
Points+: 5 pts+ for 1 and 1/4 cup

1.3 lbs 99% lean ground turkey
1 medium onion, pureed*
1 bell pepper, pureed*
 jalapeños**
15 oz can of corn, drained
15 oz can of kidney beans, drained and rinsed
15 oz can of tomato sauce
16 oz can of fat free refried beans
1 packet of taco seasoning (hot & spicy is my preference)
2 1/2 cups of warm water
2 chicken bullion cubes


In a large pot, brown turkey on medium heat, breaking up with a wooden spoon as it cooks. When cooked through, add onions and pepper and cook 2-3 minutes. Add  jalapeños, corn, beans, tomato sauce, refried beans, taco seasoning, water, and chicken bullion cubes. Bring to a boil and simmer about 10-15 minutes.

Serve your favorite toppings such as low fat sour cream, jalapeños, reduced fat cheese, chopped scallions,  onions, or chopped fresh cilantro. 

I freeze in individual portions.  

*I puree the onion and bell pepper because I do not like chunky chunks (yes that is right, chunky chunks) of them in my soup.  ** You can leave this out if you wish.
